The olive oil cold pressing is nowdays assisted by tecnology: olives are separated by leaves, washed, smashed and melted and, finally pure oil is separated from water by spins.

OOH Olive oil Harvest in Paluffo November 2010

This year the olive oil harvest was made with the help of some guests of Paluffo. We harvest the olives and pressed them in the same day; the oil quality is really excellent (0,15% acidity)!
And for dinner, as prescribed by traditions, we ate cavolo nero (black cabbage) on the pane toscano with the fresh olio novo... buonissimo!

The name Paluffo is coming from the family name of the ancestors of the actual owner Liana: Paluffi.
Thanks to the priest of the little romanic church of S. Donato close to Paluffo, we were able to access to the church archives up to 1769 and we found the Paluffi family story.
Since then the place has been commonly called the "Paluffo". Given as wedding gift from Giuseppe Paluffi, captain of the Royal Army who really loved this building, to his daughter Adelaide in the middle of the 19th century, the house has always remained among the family's properties and now is managed by Liana with love and passion as her ancestors.
